Spinach chicken dal rice!
It's super healthy, with ingredients from almost all food groups, including carbohydrates, protiens (from 2 sources) with lots of iron! And tastes great! It's sure to become a kids' favourite too! Enjoy :)
Ingredients:
2cups of rice
2cups of minced chicken
2cups spinach (shredded)
1cup green gram dal
2onions
2 tomatoes
2 cloves garlic
1cup oil
2cardamoms (green)
1black cardamom
1tsp cumin
1/2tsp turmeric powder
1/2tsp cinnamon powder
4 cups water
1tsp salt
1tsp black pepper
Method:
Heat oil in a pan. Add finely chopped onions and garlic. When onions become transparent add chicken and cook till it starts to get white. Then add tomatoes, cardamom, cumin, cinnamon powder and mix well. Then add 2 cups of water and green gram dal and cover the pan with a lid and let it cook for 10 minutes. Once the legume is soft, add 2 cups of water, spinach, rice, salt, pepper and turmeric powder. Cook while keep mixing after every minute till the water starts to bubble and rice start to appear above water. Cook for another 5 minutes and then cover the pan with a lid. When steam starts to come out from the pan, dim the flame and cook for 10 minutes.
