Quick and Easy Lemon & Strawberry Delight!

If you are having a few friends over and need a quick, fool proof recipe for dessert then this cake is THE ONE for you! It has a soft lemon cake for base and a creamy strawberry flavoured top layer. And the best news is that you can easily make it in the microwave oven!
So Let’s Get Started!

For Lemon Cake

Ingredients:

1cup flour
1 tsp baking powder
1cup caster sugar
1cup butter
2 eggs
2 tablespoons yogurt
2 tablespoons freshly squeezed lemon juice

Method:

Sift 1 cup flour and add baking powder, sugar, butter, eggs, yogurt and lemon juice and mix well till you get a smooth consistency. Pour the mixture in an oiled pan and cook in a microwave oven for 2-3 minutes. Insert a tooth pick or fork in the center of the cake, if it come out dry your cake is ready. Take it out of the oven and let it cool till you make the strawberry topping.

For Strawberry Topping:

Ingredients:

1 cup yogurt
1 cup cream
1 packet strawberry flavoured jelly crystals
1 small tin of condensed milk (sweetened)

Method:

Blend all the ingredients by an electronic mixer till it is mixed well. Add chunks of bananas, pineapple or any other fruit that you like. Or not.
Pour this on top of the cake and refrigerate over night.
Decorate with Sprinkles and fruits and Devour it!
