Quick and Healthy fig and peach cake!
Ingredients
1 and a half cup all purpose flour1 cup oats (you can use Quaker oats)
2 peaches
5 dried figs
3 eggs
1 cup brown sugar
half cup white sugar
1 tsp baking powder
1 cup butter
Method:
-Melt the butter in a pan-Beat 3 eggs in a bowl and add butter, flour, oats, baking powder and sugar and mix well.
-Soak the figs in hot water for 5 minutes.
-Cut 2 peaches, with skin, put them in a blender.
-Blend the peaches and figs together.
-Mix the blended paste of figs and peaches into the flour and sugar mixture.
-Cook in a microwave oven for 4 minutes. Check the center by inserting a fork in it. If it comes out dry then the cake is done!
Enjoy with tea or coffee!
